[FW1] http proxy, ftp proxy, smtp proxy ...

Hello, 

I would like to be sure that no informations can be found when connectiong
to my servers
I want to remove the head infos on packets, and welcome messages from
proxies, etc ...
Do you understand ?

Is this is possible on Firewall-1 ?
I've seen there are  "security severs" in the firewall--1 properties setup,
but is this 
that I have to configure ?
Is it the only thing I can configure for my problem ?
